- 1 small pumpkin (weighing about 2 1/2 lb.)
- 9 oz. ready-made pie pastry
- 1 1/4 c. heavy cream
- 3 eggs
- 3/4 c. sugar
- 1/2 tsp. salt
- 1 tsp. ground ginger
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
Directions

1Set oven to 400°.

2For the pastry, roll into a circle and line a 9-inch pie pan.

3Bake for about 15 minutes or until golden brown.

4Scoop the flesh out of the pumpkin and throw away the skin and seeds.

5Put in a pan and cover with water; simmer for 25 minutes.

6Drain away the water and leave the pumpkin to cool down. Mash with a fork or in a blender until it's perfectly smooth and free of lumps.

7Beat pumpkin, eggs, cream, salt, sugar and spices.
