- 1 ready to bake pie crust
- 1 can (16 oz.) pumpkin
- 2 eggs, beaten
- 3/4 c. sugar
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
- 1 1/2 c. undiluted evaporated milk
Directions

1Preheat oven to 425°.

2Combine first eight ingredients.

3Pour in pie crust.

4Bake for 15 minutes. Reduce temperature to 350° for 40 to 50 minutes or until knife comes out clean.

5Cool.

6Garnish with whipped topping if desired.

7Cover edge of crust with strips of foil after 15 to 20 minutes of baking to prevent excessive browning.
