  • 2 eggs, beaten
  • 1 can (16 oz.) pumpkin
  • 1 c. firmly packed brown sugar
  • 1 Tbsp. pumpkin pie spice *
  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1 2/3 c. (13 oz. can) evaporated milk
  • 1 (9-inch) unbaked pastry shell with high fluted edge

Directions

    Combine eggs and pumpkin.

    Blend in sugar, spice, flour and salt.

    Mix well.

    Add milk and mix well.

    Pour into pastry shell. Bake at 425° for 15 minutes.

    Reduce heat to 350° and continue baking 35 to 40 minutes or until knife inserted near center comes out clean.

    Cool.

    Store in refrigerator.

    Makes one pie (8 servings).
