- 2 eggs, beaten
- 1 can (16 oz.) pumpkin
- 1 c. firmly packed brown sugar
- 1 Tbsp. pumpkin pie spice *
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1 2/3 c. (13 oz. can) evaporated milk
- 1 (9-inch) unbaked pastry shell with high fluted edge
Directions

1Combine eggs and pumpkin.

2Blend in sugar, spice, flour and salt.

3Mix well.

4Add milk and mix well.

5Pour into pastry shell. Bake at 425° for 15 minutes.

6Reduce heat to 350° and continue baking 35 to 40 minutes or until knife inserted near center comes out clean.

7Cool.

8Store in refrigerator.

9Makes one pie (8 servings).

10May double for 2 pies.
