  • 1 unbaked pastry shell (9-inch)
  • 2 eggs
  • 1 c. brown sugar
  • 2 c. canned pumpkin
  • 1 1/2 c. evaporated milk
  • 1/2 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves

    Preheat oven to 450°.

    In large mixing bowl, beat eggs slightly; add remaining ingredients and mix well.

    Pour custard into pastry shell.

    Bake 10 minutes; reduce temperature to 300° and continue baking until knife inserted in center comes out clean, about 40 to 50 minutes.

    Cool.

    Serve with whipped cream. Makes one 9-inch pie.
