Pumpkin Pound Cake

  • 1 c. butter or margarine, softened
  • 3 c. sugar
  • 5 large eggs
  • 3 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. soda
  • 1/2 tsp. ground cinnamon
  • 2 tsp. ground cloves
  • 1/4 tsp. apple pie spice
  • 2 c. canned or cooked, mashed pumpkin

Directions

    Beat butter at medium speed 2 minutes or until soft and creamy. Add sugar and beat at medium speed 5 to 7 minutes.

    Add eggs, one at a time, beating just until yellow disappears. Sift flour with the next 5 ingredients.

    Add flour mixture alternately with pumpkin, beginning and ending with flour mixture.

    Mix at low speed just until blended after each addition.

    Pour into a greased and floured 10-inch tube pan. Bake at 325° for 1 hour and 25 to 30 minutes. Cool in pan 10 minutes before removing from pan.
