Ingredients

  • 1 1/2 c. cooked or canned pumpkin (13 oz. can)
  • 3 Tbsp. brown sugar
  • 1/2 to 3/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 1/8 to 1/4 tsp. ground ginger
  • 2 eggs
  • 3/4 c. evaporated skim milk
  • 6 vanilla wafers, crumbled (optional)

Directions

    Mix all ingredients except cookie crumbs in a mixing bowl. Place in lightly oiled baking dish. Cover and bake at 325° for 1 hour.

    Serve warm or chilled with crumbled wafers sprinkled on top.
