- 3 eggs
- 1 c. sugar
- 2/3 c. canned pumpkin
- 3/4 c. buttermilk baking mix
- 1/2 tsp. nutmeg
- 1 tsp. pumpkin pie spice
- 2 tsp. cinnamon
- 1 c. chopped nuts
Directions

1Heat oven to 375°.

2Grease a 15 x 10 x 1-inch jellyroll pan. Line pan with waxed paper.

3Grease wax paper.

4Beat until fluffy the eggs and sugar.

5Beat in pumpkin.

6Stir in buttermilk baking mix, nutmeg, pumpkin pie spice and cinnamon.

7Pour into pan and spread evenly.

8Sprinkle with nuts.

9Bake 12 to 14 minutes. Invert onto towel dusted with powdered sugar.

10Peel off waxed paper.

11Roll up cake and towel from short side.

12Place on wire rack and cool completely.

13Unroll cake.
-
14Spread with filling. Re-roll cake and refrigerate.
