- 3 eggs
- 1 c. sugar
- 3/4 c. pumpkin
- 3/4 c. flour
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 c. nuts
Directions

1Beat eggs at high speed for 5 minutes.

2Gradually add sugar in small amounts.

3Beat until thick.

4Fold in pumpkin and dry ingredients.

5Mix well.

6Grease a 15 x 10-inch pan and line with waxed paper.

7Pour batter into pan.

8Sprinkle with chopped nuts. Bake in a preheated 375° oven for 15 minutes.

9Turn out on a clean towel which is sprinkled with powdered sugar.

10Roll as a jelly roll and let cool.

11Unroll and spread with filling.

12Then re-roll, chill and keep refrigerated.
