- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 1/2 tsp. salt
- 1 c. finely chopped pecans
- 3/4 c. flour
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1 tsp. baking powder
- 1/2 tsp. nutmeg
Directions

1Beat eggs at high speed for 5 minutes. Gradually add 1 cup sugar.

2Stir in pumpkin and lemon juice.

3Sift and fold flour mixture (the remaining dry ingredients except pecans) into pumpkin mixture.

4Spread into greased and floured cookie sheet.

5Top with pecans.

6Bake at 350° for 15 to 20 minutes.

7Watch closely.

8When done, turn out on tea towel.

9Sprinkle with powdered sugar.

10Roll up towel and cake and cool completely.

11Then, unroll and spread with Pumpkin Roll Filling.
