- 5 eggs
- 1 1/2 c. sugar
- 1 c. canned pumpkin
- 1 1/2 tsp. lemon juice
- 1 1/8 c. flour
- 1 1/2 tsp. baking powder
- 3 tsp. ground cinnamon
- 1 1/2 tsp. ginger
- 3/4 tsp. nutmeg
- 3/4 tsp. salt
- 1 c. nuts
Directions

1Beat eggs on high speed for 5 minutes.

2Gradually beat in sugar.

3Stir in remaining ingredients.

4Spread in a well sprayed sheet pan (12 x 17 x 1-inch).

5Bake at 350° for 15 minutes, or until toothpick comes out clean.

6Loosen edges carefully from pan and dump cake on towel, well sprinkled with powdered sugar. While cake is still hot, roll cake in towel from narrow side. Cool on wire rack.

7Unroll cooled cake to put filling and nuts on.
