- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 3/4 c. flour
- 1 tsp. ginger
- 1 tsp. baking powder
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 c. chopped pecans
- confectioners sugar (to dust roll)
- 2 (3 oz.) pkg. cream cheese
- 4 Tbsp. butter
- 1/2 tsp. vanilla
- 1 c. powdered sugar
Directions

1Beat eggs on high speed of mixer for 5 minutes.

2Gradually beat in sugar.

3Stir in pumpkin; stir together flour, baking powder, cinnamon, ginger, nutmeg and salt.

4Fold into pumpkin and spread on a well-greased and floured cookie sheet.

5Top with nuts; bake at 375°

6for 15 minutes.

7Turn out on towel dusted with powdered sugar.

8Starting at one end, roll towel and cake.

9Cool in freezer and then unroll.
