Ingredients
- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. soda
- 3/4 c. plain flour
- 1 tsp. cinnamon
- 1 c. nuts
- 1 tsp. soda
- 1 (8 oz.) pkg. cream cheese
- 1 c. powdered sugar
- 3 Tbsp. margarine
- 1 tsp. vanilla
Directions

1Preheat oven to 375°.

2Grease cookie sheet.

3Beat eggs with 1 cup sugar until mixture is light and creamy.

4Add pumpkin, soda, plain flour and cinnamon.

5Mix well.

6Pour into prepared pan. Sprinkle with chopped nuts (better without).

7Bake 15 to 20 minutes.

8When done, turn onto clean towel that has been sprinkled with powdered sugar.

9Roll up like jelly roll (in towel) until completely cool.

10When cool, unroll and spread with mixture of cream cheese, 1 cup powdered sugar, margarine and vanilla.

11Now roll.

12Wrap in foil and refrigerate.

13Freezes well.
