Pumpkin Shell Casserole

- 1 small pumpkin shell
- 2 c. peeled chopped apples
- 1 c. raisins
- 1 c. chopped pecans
- 1/3 c. sugar
- 1 tsp. lemon juice
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
Directions

1Preheat oven to 350°.

2Wash and dry pumpkin (approximately 7-inches in diameter; you can use larger, but it takes longer to cook and you may have trouble removing it from cookie sheet.)

3Fill pumpkin with two parts apples, one part raisins and one part pecans.

4Add sugar to taste.

5Add lemon juice, cinnamon and nutmeg. Mix well.

6Return lid to pumpkin.

7Place pumpkin on a cookie sheet. Bake until apples are tender.

8Begin checking after 40 minutes, but it may take up to 1 hour and 45 minutes longer.

9This casserole may be served hot or cold.

10Serve from the shell, spooning some pumpkin with each portion.

11Top with sour cream if desired.
