  • 2 c. chicken stock
  • 2 to 3 chopped carrots
  • 2 to 3 chopped celery stalks
  • 1 chopped onion
  • 2 bay leaves
  • 1/4 tsp. thyme
  • sherry or white wine
  • 2 Tbsp. butter

    Boil for 30 minutes.

    Puree ingredients.

    Boil again for 20 minutes.

    Add 1/4 cup sherry or white wine.
