Pumpkin Soup

  • 1 cup onion
  • 6 tablespoons butter
  • 4 cups mashed cooked pumpkin
  • 2 teaspoons salt
  • 6 tablespoons sugar
  • 1 teaspoon nutmeg
  • 4 cups chicken broth
  • 1 cups heavy cream or half-and-half
  • 1 cup Optional: Pine nuts

Directions

    Chop onions and gently brown with butter in a large saucepan.

    Mix mashed pumpkin into the onions and then add the salt, sugar, nutmeg, and pepper.

    Slowly add chicken broth, stir, and heat thoroughly, but do not boil.

    Spread the pine nuts on a baking sheet and heat oven to 350 degrees. Toast pine nuts for about 5 minutes

    Just before serving, stir in cream, and let soup rewarm.

    Optional: serve with toasted pine nuts to sprinkle on top. Adds a wonderful flavor and texture.
