  • 2 Tablespoons Salted Butter
  • 1 White Onion, Sliced Thinly
  • 1 Yellow Bell Pepper, Julienned
  • 1 clove Garlic, Crushed
  • 1 teaspoon Dried Thyme
  • 2 Tablespoons Dried Turmeric
  • 2 pounds Peeled And Diced Fresh Pumpkin
  • Salt And Pepper
  • 3 cups Unsalted Chicken Stock
  • 1 cup Heavy Cream

Directions

    In a pot, melt butter. Add onion, bell pepper, garlic, thyme, turmeric and pumpkin. Season with salt and pepper. Cook over medium/high heat until onion becomes translucent.

    Add chicken stock and simmer over medium heat, uncovered, for 15 minutes.

    Carefully pour soup into a blender or food processor container and blend. Return soup to pot and add heavy cream.
