- 2 Tablespoons Salted Butter
- 1 White Onion, Sliced Thinly
- 1 Yellow Bell Pepper, Julienned
- 1 clove Garlic, Crushed
- 1 teaspoon Dried Thyme
- 2 Tablespoons Dried Turmeric
- 2 pounds Peeled And Diced Fresh Pumpkin
- Salt And Pepper
- 3 cups Unsalted Chicken Stock
- 1 cup Heavy Cream
Directions

1In a pot, melt butter. Add onion, bell pepper, garlic, thyme, turmeric and pumpkin. Season with salt and pepper. Cook over medium/high heat until onion becomes translucent.

2Add chicken stock and simmer over medium heat, uncovered, for 15 minutes.

3Carefully pour soup into a blender or food processor container and blend. Return soup to pot and add heavy cream.
