- 2 1/2 Tbsp. margarine
- 1/4 c. granulated sugar
- 1/4 c. packed brown sugar
- 1 egg
- 3/4 c. cooked sieved pumpkin or 5 oz. canned
- 1/2 tsp. vanilla extract
- 3/4 c. whole wheat flour
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. ginger
- 1/2 c. raisins
Directions

1In mixing bowl, cream shortening with sugars.

2Beat in eggs, pumpkin and vanilla.

3Sift the flour, baking soda and spices into a bowl; pour any bran remaining in sifter.

4Add the flour mixture to the pumpkin batter and stir in raisins.

5Drop by teaspoonfuls onto lightly greased baking sheets.

6Bake in 375° oven 12 to 15 minutes. Cool and serve.
