  • olive oil
  • 1/2 onion finely chopped
  • 9/16 pound ground beef
  • salt
  • ground black pepper
  • 1 3/4 cups crushed tomatoes canned
  • 13/16 cup pumpkin sliced into small cubes
  • 1 garlic clove minced
  • 1 1/8 cups red beans canned
  • 1 9/16 cups corn kernels cooked

Directions

    Heat a dash of olive oil in a large cooking pot at low flame.

    Add the onion, ground beef, and salt and pepper to taste to the cooking pot. Stir occasionally until the onion looks transparent.

    Add the crushed tomatoes, pumpkin, and garlic, and cook for 20 minutes while stirring occasionally.

    Add the red beans and corn kernels to the pot, and cook for 5 minutes while stirring occasionally.

    Turn off the stove and serve.
