- 3 cups diced butternut pumpkin
- 100 g peeled walnuts
- 1 cup flour
- 1 cup brown sugar
- 1 tablespoon baking soda
- 1 tablespoon baking powder
- 1 tablespoon cinnamon
- 1 egg
- 13 cup vegetable oil
Directions

1Preheat oven to 180c.

2Boil pumpkin in water with 2 tbsp of sugar til soft.

3Drain off water & let cool for 3 minutes.

4Drain off remaining water.

5Mix flour, sugar, baking soda & baking powder in a bowl.

6Crush walnuts, save 10 halves for later.

7Mix in vege oil, egg, pumpkin and a tbsp of cinnamon.

8Combine flour & walnuts mix.

9Add in flour bit by bit & stir constantly.

10Put muffin dough into muffin tray & fill till 1/2 full.

11Place halves walnuts on top & bake for 20 minutes.
