  • 1 lb lean ground beef
  • 12 red bell pepper, diced
  • 12 green bell pepper, diced
  • 12 small onion, diced
  • 1 (10 ounce) can Rotel tomatoes & chilies (I use hot)
  • 8 ounces sour cream
  • 1 lb Velveeta cheese
  • salt and pepper

    1.First brown your ground beef in a skillet adding salt and pepper to taste.

    While that's cooking, chop your Velveeta in to small chunks and put into a crock pot.

    Chop up your peppers and onions and add those to the crock pot with the cheese.

    Add your sour cream and can of Rotel to the mix.

    As soon as your meat is done and it to the mix.

    Cook on high for about 15 minutes stirring occasionally so the cheese doesn't burn.
