Ingredients

  • 1 or 2 Tbsp. oil plus water to equal 6 Tbsp.
  • 1 medium onion, chopped
  • 1 c. sliced, fresh mushrooms
  • 1 (10 oz.) pkg. frozen spinach (optional)
  • 1 1/2 lb. tofu, mashed
  • 1 1/2 Tbsp. soy sauce
  • pinch of turmeric
  • 1 tsp. salt (optional)
  • 1/4 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cumin and/or celery salt
  • 3 Tbsp. lemon juice
  • broccoli, cut fine

Directions

    Saute together the oil, water and onion, then add remaining ingredients.

    Cook 5 minutes.

    Pour tofu mixture into an 8-inch unbaked pie shell.

    Bake for 45 to 60 minutes, until set.
