Quiche Aux Poireaux

  • 1/2 c. chopped leek or onion
  • 1 Tbsp. butter
  • 1/2 c. smoked canned salmon, flaked
  • 1/4 c. chopped fresh dill
  • 1 unbaked 8-inch pastry shell
  • 1 c. half and half
  • 3 eggs
  • 1/4 c. flour
  • salt, pepper and nutmeg
  • 1 c. shredded Swiss cheese

Directions

    Saute leeks in butter until tender.

    Add salmon and dill; toss lightly.

    Turn in bottom of pastry shell.

    Combine half and half, eggs, flour, salt, pepper and nutmeg to taste and mix until smooth. Pour into shell over salmon mixture.

    Sprinkle with cheese and bake at 400° for 35 to 40 minutes.
