- 1/2 c. chopped leek or onion
- 1 Tbsp. butter
- 1/2 c. smoked canned salmon, flaked
- 1/4 c. chopped fresh dill
- 1 unbaked 8-inch pastry shell
- 1 c. half and half
- 3 eggs
- 1/4 c. flour
- salt, pepper and nutmeg
- 1 c. shredded Swiss cheese
Directions

1Saute leeks in butter until tender.

2Add salmon and dill; toss lightly.

3Turn in bottom of pastry shell.

4Combine half and half, eggs, flour, salt, pepper and nutmeg to taste and mix until smooth. Pour into shell over salmon mixture.

5Sprinkle with cheese and bake at 400° for 35 to 40 minutes.
