- 1 pie crust (frozen is okay)
- 1 pkg. frozen spinach, chopped and thawed
- 1/2 lb. bacon, chopped
- 1 large onion, chopped
- 1/2 lb. mushrooms, sliced
- 1 pt. heavy cream
- 4 eggs, slightly beaten
- 8 oz. Gruyere cheese, grated
- nutmeg
Directions

1Prepare pie crust and preheat oven to 350°.

2Saute bacon, onions and mushrooms until bacon is done and onions are clear. Squeeze as much water out of spinach as possible.

3Add to bacon mixture and cook 3 more minutes.

4Set aside.

5Mix eggs, cream and cheese.

6Press bacon/spinach mixture in bottom of crust.

7Pour cream mixture on top.

8Sprinkle with nutmeg and bake approximately 45 minutes.
