- 1 frozen pie shell
- 2 eggs
- 1/2 c. regular milk
- 1/4 to 1/2 lb. Swiss cheese, chunked
- 1/4 to 1/2 lb. Cheddar cheese, chunked
- 2 Tbsp. flour
- 1/2 c. mayonnaise
- 1 pkg. frozen spinach, cooked and drained *
- 4 strips bacon *
- 1/2 c. sliced mushrooms *
- 1/3 c. onion, chopped *
Directions

1Brown pie shell 10 minutes after having pierced bottom with fork.

2Use hand mixer at low speed to blend eggs, milk, mayonnaise and flour.

3Dice cheese and mix in with fork.

4Cook bacon and drain on paper towels.

5Saute onion and mushrooms in bacon fat. Add cooked spinach, crumbled bacon, onion and mushrooms to quiche mixture.

6Mix with fork.

7Pour into shell.

8Bake for 45 to 60 minutes in 350° oven.

9Cool slightly before serving.
