- 1 1/2 Tbsp. butter
- 1 c. diced ham or bacon
- 5 eggs
- 1 egg yolk
- 2 1/2 c. light cream
- 1/8 tsp. nutmeg
- 1/2 tsp. salt
- 2 dashes cayenne pepper
- dash of white pepper
- 1 c. grated Swiss cheese
Directions

1Line 10-inch pan with pastry.

2Bake 8 to 9 minutes at 400°. Cook onion in butter until transparent.

3Mix with ham.

4Beat eggs and egg yolk, light cream and seasonings.

5Add to ham mixture. Pour into pastry shell.

6Top with cheese.

7Bake at 350° for 30 to 35 minutes or until set.
