  • 2 frozen ready bake pie crusts
  • 1 (16 oz.) bag frozen vegetables (any kind)
  • 7 eggs
  • 2 c. grated Swiss cheese
  • 1 can cream-style condensed soup (any kind)

    Steam and drain vegetables.

    Arrange in pie crusts.

    Mix soup and eggs in blender.

    Scatter 1/2 cup cheese over vegetables in each pie crust.

    Pour soup and egg mix into crusts over vegetables.

    Sprinkle remaining cheese over the top of the mixture and bake in 375° oven until firm, approximately 45 minutes. Serves 8 (or freeze one pie and save until later).
