Ingredients

  • 8 cups chicken broth
  • 1 sweet onion - sliced
  • 3 cloves garlic - chopped
  • 1 handful Italian parsley chopped
  • 1 cup crushed tomatoes
  • 29 ounces red kidney beans can of, - drained
  • 1/2 lemon
  • 1/2 teaspoon salt
  • 1 dash black pepper
  • 1 dash dried oregano
  • 1 dash smoked paprika
  • 1 dash chili powder
  • curry Dash of ground
  • romano cheese for grating
  • olive oil

Directions

    Heat a drizzle of olive oil in a sauce pot and add the onions and garlic to saute. When the onions are soft and transparent add the chopped parsley and chicken broth.

    Gently simmer for a few minutes. Add the crushed tomatoes and the drained beans and continue to gently simmer on low.

    Add the seasonings to taste and simmer while preparing your favorite noodles or rice.

    Add the lemon juice.

    Grate Romano cheese when serving.
