  • 6 apples, peeled, cored and sliced (Rome or Jonathan work well)
  • 2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 3/4 c. vegetable oil
  • 4 eggs
  • 1 c. sugar
  • 1 Tbsp. baking powder
  • 1 c. all-purpose flour
  • 1 c. whole wheat flour

    Preheat oven to 350°.

    Grease and flour a 13 x 9-inch baking pan.

    Peel, core and slice apples; set aside in large bowl.

    Blend oil, eggs and sugar with mixer; add baking powder and flours. Blend until combined.

    Pour batter over apples and gently mix until slices are well coated.

    Pour mixture of apples and batter into the baking pan; apple slices should be spread out evenly. Bake until knife comes out clean, 35 to 45 minutes.

    Great for after school with a glass of milk, or serve with a scoop of vanilla ice cream.
