  • 2 Tbsp. white wine
  • 1 Tbsp. tarragon vinegar
  • 2 tsp. fresh tarragon
  • 2 tsp. shallots or onion
  • 1/4 tsp. pepper
  • 1 stick butter
  • 3 egg yolks
  • 2 Tbsp. lemon juice
  • pinch of cayenne

Directions

    Melt butter in small saucepan with wine, vinegar, tarragon and onion.

    Place yolks, lemon juice and cayenne in blender.

    With machine running, add hot butter mixture slowly.

    Will thicken. Yields 1 cup.
