- 2 Tbsp. chopped onion
- 1 Tbsp. margarine
- 1 large can evaporated milk
- 2 c. skim milk
- 1 c. grated carrots
- salt and pepper to taste
- 1 Tbsp. cornstarch
- 2 Tbsp. water
Directions

1Cook onion for 1 minute.

2Add evaporated milk, skim milk, carrots and seasoning.

3Make paste of cornstarch and water, stirring constantly.

4When soup begins to simmer, cook over low heat about 15 minutes, stir often.
