Quick Cherry Crunch

  • 1/2 c. cherry juice
  • 1 1/2 Tbsp. quick-cooking tapioca
  • 1/2 c. butter or margarine
  • 1 to 1 1/2 c. packed brown sugar
  • 1 c. flour
  • 1 c. quick-cooking oatmeal
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 2 c. drained canned red cherries

    Mix cherry juice and tapioca and let stand 15 minutes.

    Melt butter in large pan, then mix with it brown sugar, flour, oatmeal, baking powder, salt and baking soda.

    Put half of this mixture in a 9 x 9 x 2-inch baking pan.

    Scatter over it drained cherries, and the juice and tapioca mixture.

    Cover the fruit with the other half of the pastry mixture.

    Bake about 30 to 35 minutes or until brown at 350°.
