Ingredients

  • 1 medium onion, chopped
  • 1 Tbsp. olive oil
  • 1 1/2 c. quick cooking rice
  • 1 1/4 c. water
  • 1 small can sliced water chestnuts
  • 2 c. cooked, diced chicken
  • 3 cloves garlic, minced
  • 3 Tbsp. soy sauce
  • 1 c. sliced mushrooms
  • 1/2 c. orange juice
  • 2 c. broccoli florets

    Combine onion, garlic, soy sauce and oil.

    Cook 1 minute. Stir in rice, orange juice, water and water chestnuts.

    Microwave on High for 5 minutes.

    Stir in broccoli and mushrooms.

    Add chicken.

    Let stand 5 minutes.
