- 4 cans (4 Oz. Can) Green Chilies
- 1 pound Grated Cheddar And/or Monterey Jack Cheese
- 4 whole Eggs, Separated
- 3 Tablespoons Flour
- 1 can (13 Oz. Can) Evaporated Milk
Directions

1Layer 2 cans of chilies in the bottom of a 9x13 in baking dish.

2Top with half of the cheese.

3Repeat with remaining chilies and cheese.

4Beat egg yolks with flour, evaporated milk, salt and pepper to taste.

5Beat egg whites until stiff. Fold into the egg yolk mixture.

6Pour over the cheese and chilies.

7Bake at 325°F for 45 minutes to 1 hour, until lightly browned.
