  • 4 cans (4 Oz. Can) Green Chilies
  • 1 pound Grated Cheddar And/or Monterey Jack Cheese
  • 4 whole Eggs, Separated
  • 3 Tablespoons Flour
  • 1 can (13 Oz. Can) Evaporated Milk

Directions

    Layer 2 cans of chilies in the bottom of a 9x13 in baking dish.

    Top with half of the cheese.
  3. 3
    Repeat with remaining chilies and cheese.

    Beat egg yolks with flour, evaporated milk, salt and pepper to taste.

    Beat egg whites until stiff. Fold into the egg yolk mixture.

    Pour over the cheese and chilies.

    Bake at 325°F for 45 minutes to 1 hour, until lightly browned.
