Ingredients

  • 2 tbsp oil
  • 1 lb ground beef
  • 2 tbsp tomato puree
  • 1 14 oz can sweet corn
  • 1 16 oz can kidney beans, drained and rinsed
  • 4 None roasted red peppers (from a jar), cut into strips
  • 1 28 oz can chopped tomatoes
  • 14 oz can baked beans
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • None None Pinch of sugar
  • 1 cup sour cream
  • 4 None whole green chilies (from a jar)
  • None None Tortilla chips, to serve

Directions

    Heat the oil in a saucepan and cook the meat for 5 mins. Stir in the tomato puree. Add the sweet corn and kidney beans and continue cooking for 3 mins. Add the peppers, tomatoes, baked beans and 2 cups of water. Stir and simmer for 5 mins. Add the paprika and cayenne pepper and season with salt, black pepper and a pinch of sugar.

    Spoon into bowls and top with a dollop of sour cream and a whole chilli. Serve with tortilla chips.
