Ingredients
- 1 lb large shrimp, peeled & deveined
- 1 lb smoked sausage
- 1 lb chicken breast, cubed
- 1 onion, diced
- 1 red pepper, diced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 (10 ounce) package yellow rice
- 3 1/2 cups water
- 1 (4 ounce) jar pimientos
- cajun seasoning, to taste (optional)
Directions

1Heat olive oil over medium-high heat. Add chicken, onion, and pepper to olive oil. Season with salt and peper; cook about 5-7 minutes, or until chicken starts to brown.

2Add sliced smoked sausage and cook another 5-7 minutes.

3Add rice mix, water, and pimientos. Cover and cook about 20 minutes, stirring occasionally so rice doesn't stick.

4Add shrimp and cook about 5-6 minutes, or until shrimp is opaque. Season with Cajun seasoning to taste, if desired.
