- 2 cups water
- 1/2 cup yellow cornmeal
- 2 tbsp. shortening
- 1/2 cup molasses
- 2 tsp. salt
- 1-1/2 tbsp. yeast (2 packages)
- 1/2 cup lukewarm water
- 7-1/2 cup flour (about)
Directions

1Boil the 2 cups water and add the cornmeal gradually, stirring constantly.

2Add the shortening, molasses and the salt.

3Let stand until lukewarm.

4Add yeast to lukewarm water and add the cornmeal mixture.

5Stir in the flour to make a stiff dough.

6Knead well.

7Place in a greased bowl, cover, and let rise in a warm place until doubled in bulk.

8Cut through the dough several times with a knife, cover and let rise again for about 45 minutes, or until light.

9Toss onto a floured board and knead well.

10Add more flour if necessary.

11Make into 2 loaves and place in a greased loaf tin.

12Cover, let rise in a warm place until doubled in bulk.

13Bake in preheated hot oven (400 degrees F) for 15 minutes then reduce the heat to 350 degres and bake 45 minutes longer or until done.

14Brush with melted butter and remove the bread from the pans to a cake rack.
