- 1 1/4 c. all-purpose flour
- 1 c. sugar
- 1/3 c. margarine, softened
- 2 eggs or 1/2 egg substitute
- 3 Tbsp. lemon juice
Directions

1Combine 1/4 cup sugar and 1 cup flour.

2Cut in margarine until mixture resembles coarse crumbs.

3Press mixture onto bottom of 8 x 7 x 2-inch baking pan.

4Bake at 350° for 15 minutes or until lightly browned.

5Blend eggs, lemon juice and remaining flour and sugar.

6Pour over pastry.

7Bake 15 minutes or until set.

8Cool slightly; sprinkle with confectioners sugar.

9Cool completely and cut into 2 x 1-inch bars.

10Yields 32 bars.
