Quick Luscious Coconut Cake

  • 1 pkg. Duncan Hines yellow cake mix
  • 2 eggs
  • 1 1/2 c. buttermilk
  • 1/2 tsp. soda
  • 2 (6 oz.) pkg. frozen coconut
  • 1 1/2 c. sugar
  • 1 c. sour cream
  • 1 small Cool Whip

Directions

    Mix cake mix with eggs, buttermilk and soda.

    Bake in two layers until done.

    Split with thread into 4 layers.

    Fill and frost with frosting which is made by whipping sour cream until it is double in bulk.

    Add sugar and whip thoroughly until dissolved. Fold in Cool Whip.

    Fold in 1 1/2 packages of thawed coconut. Fill and stack layers and frost sides and top.

    Then sprinkle with remaining 1/2 package coconut.
