Quick Pickled Cucumbers

- 1/2 c. white vinegar
- 1/4 c. sugar
- 1 1/2 tsp. crushed red pepper
- 8 cucumbers (about 2 lb.)
- 1 medium sized carrot
Directions

1About 4 1/2 hours before serving or a day ahead, in a 13 x 9-inch glass baking dish, stir together vinegar, sugar, salt and crushed red pepper.

2Cut each unpeeled cucumber lengthwise into 6 wedges.

3Place in baking dish with marinade.

4Peel carrot and cut crosswise in half; cut each half lengthwise into matchstick-thin strips.

5Place carrots in baking dish with cucumbers; toss to coat.

6Cover and refrigerate at least 4 hours, stirring occasionally.
