Quick Pineapple Coffee Cake

  • 1 12 cups flour
  • 2 teaspoons baking powder
  • 14 teaspoon salt
  • 2 tablespoons sugar
  • 1 egg
  • 12 cup milk
  • 13 cup shortening, melted
  • 13 cup fresh pineapple, diced and well drained
  • 2 tablespoons honey
  • 1 tablespoon butter, melted
  • 3 tablespoons chopped nuts

Directions

    Sift together flour, baking powder, salt and sugar.

    Beat egg; add milk and cooled shortening.

    Pour into flour mixture; stir only until dry ingredients are moistened.

    Turn into greased and floured 8 inch round layer cake pan.

    Mix pineapple, honey and butter together.

    Spoon pineapple topping over batter.

    Sprinkle nuts on top.

    Bake in preheated 400 oven for 30 minutes.
