Quick Rising Oat Bread

- 1 1/2 cup whole wheat flour whole wheat
- 1 cup rolled oats uncooked, quick or old-fashioned
- 3 each yeast, active dry active dry, packages
- 2 teaspoons salt
- 1 3/4 cup water plus 1 tb water
- 1/2 cup maple syrup
- 1/2 cup margarine or butter
- 4 cups flour, all-purpose less may be needed
Directions

1Generously grease two 8x4 or 9x5 inch loaf pans.

2In large mixer bowl, combine whole wheat flour, oats, yeast and salt.

3Heat 1 3/4 cups water, syrups, and margarine until very warm (120 to 130 degrees F).

4Pour over oats mixture; add 2 eggs.

5Beat at low speed of electric mixer 1 minute.

6Continue beating at medium speed 2 minutes.

7Gradually stir in enough all-purpose flour to make a soft dough.

8On lightly floured surface, knead in enough remaining flour until dough becomes smooth and elastic; about 10 minutes.

9Place dough in large greased bowl.

10Cover; let rise in warm place about 45 minutes or until double in size.

11Punch dough down.

12Divide into 2 parts; shape each into ball.

13Allow dough to rest, covered with inverted bowl, about 15 minutes.

14Shape each ball into loaf.

15Place in prepared pans.

16Cover; let rise in warm place about 1/2 hour or until double in size.

17Heat oven to 375F (190C).

18Combine remaining egg and 1 tablespoon water; brush over loaves.

19Bake 30 to 35 minutes or until loaves sound hollow when tapped lightly.

20Immediately remove loaves from pans.

21Cool on wire rack.
