- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 shallots, minced
- 10 ounces baby spinach
- Kosher salt and freshly ground black pepper
Directions

1Heat the olive oil in a large skillet over medium-high heat.

2Add the garlic and shallots and saute until fragrant, 1 minute.

3Add the spinach by the handful and toss with tongs until it wilts, 3 to 5 minutes.

4Season the spinach with salt and pepper.
