Ingredients
- 1 Tbsp. reduce calorie margarine
- 1/2 c. sliced green onion
- 2 c diagonally sliced celery
- 1/2 c. sliced carrots
- 1 c. sliced mushrooms (fresh)
- 2 cloves garlic, minced
- 1/2 tsp. ground ginger
- 1/8 tsp. pepper
- 2 tsp. low sodium soy sauce
- 3/4 lb. shelled and deveined shrimp (medium)
- 2 Tbsp. water
- 1 1/2 c. hot cooked rice, cooked without salt or fat
Directions

1Add margarine to heavy skillet or wok; heat to medium high (325°) for 1 minute.

2Add onions, celery, carrots, garlic and mushrooms.

3Stir-fry until vegetables are crisp-tender.

4Add ginger, pepper, soy sauce, shrimp and water; stir-fry until shrimp are pink.

5Serve over rice.
