Quick & Simple Cajun Fish

Ingredients

  • 1 teaspoon vegetable oil
  • 1 green pepper, diced
  • 2 stalks celery, diced
  • 12 teaspoon dried oregano
  • 1 (10 3/4 ounce) can condensed tomato soup
  • 13 cup water
  • 1 garlic clove, minced
  • salt and pepper
  • 1 lb cod fish fillet
  • cajun seasoning or seafood seasoning, to taste

Directions

    Sprinkle fish fillets with seafood or Cajun seasoning on both sides and set aside.

    Heat vegetable oil in skillet over medium/medium high heat.

    Add green pepper and celery and cook until tender-crisp, stirring often.

    Add minced garlic and stir until fragrant.

    Add the condensed soup, water, salt and pepper.

    Heat to a boil.

    Place fish into the tomato soup mixture, and reduce heat to low.

    Cover and simmer for 5 or 6 minutes or until fish flakes easily with a fork.

    Can be served over rice, or in bowls with crusty bread.
