Quick Tortellini Soup

Ingredients
- 2 cloves garlic
- 1 Tbsp. olive oil
- 2 (14 oz.) cans chicken stock or vegetable stock
- 1 (9 oz.) pkg. fresh tortellini (cheese filled)
- 1 (14 oz.) can Italian stewed tomatoes, mashed slightly
- 1/2 bunch fresh spinach, torn
- 6 fresh basil leaves, 1/2 tsp. dried basil or 1 Tbsp. pesto
- freshly grated Parmesan or Romano
Directions

1Saute garlic cloves lightly in olive oil.

2Add chicken or vegetable stock and fresh tortellini.

3Cook until tortellini is tender (about 8 to 10 minutes).

4Add remaining ingredients, except cheese.

5Simmer 2 minutes.

6Serve immediately, topped with cheese.
