- 1 16 oz. box penne pasta
- 1 can artichoke hearts, drained and chopped roughly
- 3 tablespoons virgin olive oil
- 1 tablespoon minced garlic
- 1 teaspoon red pepper flakes
- 2 cups shredded mozzarella or havarti cheese
- 1/4 cup pine nuts, browned in a dry skillet

1Work QUICKLY -- everything needs to be mixed while the pasta is hot so that the last item--the cheese-- will melt!
