Ingredients

  • 2 cups quinoa
  • 23 cup black olives cut in half
  • 23 cup green olives cut in half
  • 1/4 cup pine nuts lightly roasted
  • 1 bunch scallions, spring or green onions chopped
  • 1/4 cup parsley leaves chopped
  • 1/2 small sweet red bell peppers cut up
  • 2 each garlic cloves minced
  • 2 tablespoons olive oil, extra-virgin
  • 4 tablespoons plum vinegar

Directions

    Cook Quinoa according to package directions.

    Cool, then mix in remaining ingredients, adding Ume Vinegar last and seasoning to taste.
