  • 2 cups cooked quinoa cooled
  • 1/4 cup shredded mozzarella
  • 2 large eggs
  • 1 1/2 teaspoons garlic salt
  • 1 teaspoon italian seasoning
  • 1 teaspoon olive oil
  • 1/2 teaspoon baking powder

    Preheat oven to 425F. Line a baking sheet with parchment paper or grease it with cooking spray.

    In a large mixing bowl, combine quinoa and mozzarella. In a small bowl, whisk together the eggs, garlic salt, Italian seasoning, olive oil, and baking powder.
