Ingredients
- 1 cup quinoa
- 2 cup water
- 2 tomatoes, chopped
- 1 small red bell pepper, chopped
- 1 small red onion, chopped
- 1 can corn, rinsed
- 1 can black beans, rinsed
- 1/2 cup cilantro, chopped
- 3 clove garlic, minced
- 1 jalapeno, seeded and diced
- 1/3 cup olive oil, extra virgin
- 1 tbsp ground cumin
- 2 juiced limes
- 1 tbsp Sea salt
Directions

1Bring water up to boil, add quinoa, then turn down to a simmer for 10-15 minutes, until done.

2In large bowl, combine all salad ingredients, stir to combine

3Prepare dressing by whisking ingredients for 1-2 minutes.

4Pour over salad and stir well to combine.
