Ingredients

  • 1 cup quinoa
  • 2 cup water
  • 2 tomatoes, chopped
  • 1 small red bell pepper, chopped
  • 1 small red onion, chopped
  • 1 can corn, rinsed
  • 1 can black beans, rinsed
  • 1/2 cup cilantro, chopped
  • 3 clove garlic, minced
  • 1 jalapeno, seeded and diced
  • 1/3 cup olive oil, extra virgin
  • 1 tbsp ground cumin
  • 2 juiced limes
  • 1 tbsp Sea salt

Directions

    Bring water up to boil, add quinoa, then turn down to a simmer for 10-15 minutes, until done.

    In large bowl, combine all salad ingredients, stir to combine

    Prepare dressing by whisking ingredients for 1-2 minutes.

    Pour over salad and stir well to combine.
