Easy Oven Fried Fish

  • 1 lb. fresh or frozen flounder fillets
  • 1 slightly beaten egg white
  • 3 Tbsp. frozen grapefruit or orange juice concentrate, thawed
  • 1 Tbsp. Worcestershire sauce
  • 1/2 c. crushed rich round crackers (about 12)
  • 1/4 c. toasted wheat germ
  • 1 Tbsp. butter or margarine, melted

    Thaw fish, if frozen.

    Separate fillets and pat dry with paper towel.

    Combine beaten egg white, grapefruit or orange juice concentrate and Worcestershire sauce.

    In another bowl, combine crushed crackers and wheat germ.

    Dip fish fillets into egg white mixture, then in the crumb mixture.

    Arrange fillets in a 13 x 9 x 2-inch baking dish, tucking under any thin edges so fish will be uniform in thickness and cook evenly.

    Drizzle the melted butter or margarine evenly over fish.

    Bake in a 500° oven for 8 to 10 minutes or until fish flakes easily when tested with fork.
